What is Eggdrop?
Eggdrop sandwiches originate from Korea and are known for their exceptionally soft scrambled eggs, freshly prepared and served in buttery brioche. They are often complemented by various toppings such as bulgogi, spam, or shrimp.
At CHOI CAFE, we prepare every sandwich à la minute – each portion individually, without pre-production. This ensures that every Eggdrop Sandwich meets our standards in terms of quality, texture, and taste.

How to make the perfect eggdrop
Our eggdrop sandwiches are always freshly prepared to order. The brioche bread is baked several times a week by our baker and delivered to us. When you order, the bread is toasted golden brown on the grill, so it's crispy on the outside and soft on the inside.
Each individual portion is made to order: egg, meat, and all other ingredients are prepared separately and fresh – without pre-production or keeping warm. We use only fresh, free-range eggs for our characteristically fluffy scrambled eggs.
This careful preparation process ensures that each eggdrop sandwich retains its typical taste, juicy texture, and high quality for which Korean eggdrop sandwiches are known.
