The roots of matcha
The story of Matcha goes back over 800 years to ancient Japan. Buddhist monks first began grinding shade-grown green tea leaves into a fine powder and whisking it with water as part of their meditation rituals.
They valued Matcha for its unique ability to calm the mind while keeping it alert - a perfect balance of peace and focus.
Over time, Matcha became central to the Japanese tea ceremony, symbolizing mindfulness, respect, and simplicity. Today, this centuries-old tradition has found new life in modern cafés around the world where the same vibrant green tea meets milk, ice, and creativity.
At CHOI CAFE, we honor that heritage while giving it a fresh, modern twist — bringing the energy of Matcha to Vienna, one cup at a time.

Manufacuring
The tea plants are grown under shade for several weeks before harvest, a traditional method that slows down photosynthesis and concentrates the natural chlorophyll inside the leaves.This is what gives Matcha its deep, vibrant green color and smooth, umami-rich flavor.
Only the youngest and most delicate leaves are picked by hand, steamed to preserve their freshness, and then carefully stone-ground into an ultra-fine powder.
This meticulous process creates what’s known as Matcha.
At CHOI CAFE, we use ceremonial grade matcha that we get from several matcha farmers that has a strong nutty & umami taste and close to no bitterness.

We don’t pre-mix or batch our drinks; each one starts fresh, with precisely weighed Matcha powder and the milk of your choice.
You can enjoy your Matcha just the way you like it: unsweetened and pure, lightly sweetened for balance, or topped with something special — like our house-made strawberry jam or creamy banana pudding.
